Savory Roasted Chicken Thighs

Here is a recipe for roasted chicken thighs that I came up with. It’s moist and flavorful without all the calories from butter and oil.

Ingredients:

5 skinless chicken thighs ( It’s cheaper if you buy the chicken thighs bone in with skin and then just wash and remove the skin yourself)

About 1/2 a can of low sodium chicken broth

1 Tsp salt

1Tsp ground black pepper

1 Tsp season salt

1 tsp poultry seasoning

1 tsp Chili powder (if you like a little spice)

5 tsp of whipped margarine (1 tsp for each chicken thigh.
Land o Lakes is a good one.)

Directions:

Preheat oven to 425 degrees.

Line a deep baking dish or cake pan with aluminum foil.
Place chicken thighs inside the dish and season both sides. Leave underside up.
Place 1 tsp of margarine on each chicken thigh. Then pour in the chicken broth
to create a shallow bath. Not too much because the chicken will produce its own
juices during the cooking process.

Cover the chicken with another sheet of aluminum foil
leaving an opening for steam to escape. Bake in the oven for 40 minutes to an
hour until the chicken is cooked through.
